National Panini Month: 5 Nutritious Panini Recipes Featuring Fruits and Vegetables

August is National Panini Month. We’re celebrating by putting together a list of delicious Panini recipes that don’t skimp on the fruits and vegetables. After all, fresh ingredients like tomatoes, zucchini and peppers can turn any good sandwich into a spectacular one!

Whether you add veggies to compliment the protein in your sandwich or you want to go all-vegetarian, these recipes will help you re-discover your love for healthy hot sandwiches just in time for the occasion.

1. Fresh Summer Panini

If you like olives, you’re going to love this fresh and nutritious Panini!  Vinegar and yellow peppers help enhance the Mediterranean flavors.  If you want to take your Panini to the next level, this recipe includes instructions to make your own flatbread. You can also use any grocery store flatbread if you’re in a hurry.

2. Grilled Vegetable Panini

This hearty yet healthy Panini will have you saying “delizioso!” thanks to the addition of fresh basil pesto. The pesto compliments the grilled zucchini, eggplant and onions. Top it off with a sliced tomato, mozzarella and roasted pepper, and this Panini will surely hit the spot when you’re craving Italian – plus you’ll get in a full serving of veggies!

3. Roast Chicken and Spinach

If you want some added protein, try this delicious roast chicken and spinach Panini recipe. Like the grilled vegetable Panini, this sandwich includes pesto and mozzarella, but ditches the zucchini for spinach as the star green.

4. Smashed Chickpea and Avocado Panini

Here’s one for those with a soft spot for avocados. Start by making the star of the show, a creamy and delicious chickpea and avocado salad. You’ll then add red bell peppers, Asiago cheese and basil pesto between two slices of Italian bread for the ultimate Panini perfection.

5. Grilled Fruit Panini With Yogurt Cheese

Satisfy your desert craving with a more sensible option using this grilled fruit Panini recipe. Pack on the fruit to get your daily serving accompanied by a delicious drizzle of nutritious honey. This is a great treat for the kids as well!
