Peanut Butter & Jelly Muffins

Bored with PB&J sandwiches? Us too. These Peanut Butter & Jelly muffins are our healthy, fun version of the lunchtime classic.  Complete Vanilla shake mix adds an extra boost of protein and nutrients, making them the perfect breakfast or lunchbox treat.


For muffins:
8 oz chickpeas
3 tbsp peanut butter
¼ tsp baking powder
½ tsp salt
1 Scoop Complete by Juice Plus+ Vanilla Shake Mix
2 oz milk of choice
Maple syrup


For jelly topping:
8 oz strawberries
7 dates, pitted



  • Using a food processor, combine chickpeas, peanut butter, salt,  Complete and your milk of choice. Add maple syrup to taste.
  • Coat baking sheet or cups with thin layer of coconut oil to prevent sticking.
  • Bake for 18-20 minutes at 375˚F.
  • To make the jelly topping, blend the strawberries and dates and then spoon onto muffins.
