Four New Ways to Eat This Season’s Fruit and Veggies

One of the lovely things about the changing of the seasons is the new crop of fruits and vegetables that appears on store shelves and in farmers’ market baskets. In the spring, we get rewarded with tender asparagus and the first lettuce leaves. Summer brings luscious berries and stone fruits. Fall is abundant with greens, crucifers, squashes, and pears. If you’re looking for new ways to enjoy your favorite fall foods, look no further. This post is loaded with new ideas for how to enjoy fall’s bounty of fruits and vegetables.

1. Add them to what you’re already eating.
One easy way to enjoy fall fruits and vegetables is to include them in foods you eat habitually, whether that means adding spinach to your morning scrambled eggs or apple slices in the grilled cheese you make for your kids’ lunch.

In that spirit, try this recipe for whole-wheat pizza with kale and radicchio that would make a nice weekend dinner that’s just slightly off the beaten track. If you’re gluten-free like me, try a cauliflower crust!
